Ingredients
- 4 boneless skinless chicken breast halves (4-oz each)
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 tsp olive oil, divided
- 3 garlic cloves, minced
- 2 tsp minced fresh ginger root
- 1 tsp grated lemon peel
- 3/4 C chicken broth, divided
- 1/2 tsp sugar
- 1/8 tsp cayenne pepper
- 1/2 med lemon, cut into thin slices
- 1 tBL cornstarch
- 1/2 C thinly sliced green onions
Preparation
Step 1
sprinkle chicken w/ S & P
in lg. nonstick skillet coated w/ cooking spray, cook chicken in 2 tsp oil for 3 min on each side or until lightly browned
remove & keep warm
in same skillet, cook garlic, ginger & lemon peel in remaining oil for 1 min
stir in 1/2 C broth, sugar & cayenne
bring to boil
return chicken to pan
top w/ lemon slices
reduce heat
cover & simmer for 7-0 min or until chicken juices run clear
remove chicken & keep warm
combine cornstarch & remaining broth until smooth
gradually stir into pan juices
bring to boil
cook & stir for 2 min or until thickened
stir in grn. onions
cook 1-2 min longer
serve over chicken
