Ginger Chicken Stir-Fry

Ingredients

  • 4 boneless skinless chicken breast halves, cut into bite-size pieces
  • 2 TBL veggie oil
  • 2 C chopped onion
  • 3 TBL cornstarch
  • 1/4 C cold water
  • 2 C chicken broth
  • 1/4 C teriyake sauce
  • 1/4 C soy sauce
  • 1/2 tsp pepper
  • 1/2 tsp grd genger
  • 1/8-1/4 tsp cayenne pepper
  • 1 garlic clove, minced

Preparation

Step 1

in lg. skillet or wok, stir-fry chicken in oil over med high heat for 10 min or until juices run clear
remove chicken & set aside

in same skillet, stir-fry broccoli, carrots & onion for 5-8 min or until tender
combine cornstarch & water until smooth/ add remaining ingred.
stir into skillet
bring to boil
cook & stir for 2 min or until thickened

return chicken to skillet & heat through
