Tomato Arugula Pasta w/ Bread Crumbs

Ingredients

  • 2 tsp olive oil
  • 1/3 cup plain dried bread crumbs
  • 2 Tbsp grated Parmesan
  • 2 Tbsp olive oil
  • 1 pt cherry or grape tomatoes
  • 2 tsp minced garlic
  • 5 oz bag baby arugula
  • Salt and pepper to taste
  • Pasta of your choice

Step 1

Cook pasta according to pkg directions. Heat 2 tsp olive oil in a large nonstick skillet. Add bread crumbs; cook, stirring often, 5 min or until toasted. Remove to a small bowl; stir in parmesan cheese. Heat 2 Tbsp olive in same skillet. Add tomatoes and garlic; saute 3 min until tomatoes start to burst. Add arugula, salt and pepper; saute 1 min or until arugula wilts. Toss hot cooked pasta; sprinkle serving with bread crumbs.
