Potato and Kale Soup

I don't remember where this recipe came from, but being a big fan of kale, was thrilled to find it. I prefer to cook the kale longer than the five minutes according to the recipe, because the kale gets more tender.

Ingredients

  • 5 Tablespoons olive oil
  • 4 medium potatoes, peeled and diced
  • 8 cups water
  • 1/4 pound smoked sausage
  • 1 pound fresh kale, chopped, woody stems removed
  • salt and pepper to taste

Preparation

Step 1

1. In a soup kettle, heat the olive oil and in it stir the potato until it is well-coated. Add the water, bring it to a boil and cook potato for 25 minutes, or until very tender.

2. Meanwhile, with fork, prick the sausage in several places and simmer it over low heat for 15 minutes. Drain and slice it into 1/2 inch rounds; reserve.

3. Puree the cooked potato in blender until smooth. Return it to the soup kettle. Add sausage and kale. Bring to boil, reduce heat and simmer for about 5 minutes. Season with salt and pepper.
