Mini Salmon Cakes

We've dressed up an irresistibly crunchy staple, cornflakes, by using them to create these party-ready fresh salmon cakes. Suitable as an appetizer or light main course.

Ingredients

  • 1 pound skinless salmon fillet, cut up
  • 1 1/2 cups cornflakes
  • 1 teaspoon grated orange peel
  • 4 tablespoons chopped cilantro
  • Salt
  • Pepper
  • 1 orange, peeled and diced

Preparation

Step 1

In food processor, pulse salmon, cornflakes, orange peel, 2 tablespoons cilantro, 1/2 teaspoon salt, and 1/4 teaspoon pepper until finely chopped. Form into 9 patties. Cook in 12-inch nonstick skillet on medium 9 to 11 minutes or until golden brown, turning once.

Combine diced orange, remaining 2 tablespoon cilantro, and 1/4 teaspoon each salt and pepper. Serve with cakes.
