COOKIES - PEANUT BUTTER COOKIES

Ingredients

• 1/2 cup margarine
• 1/2 cup brown sugar
• 1/2 cup white sugar
• 1/2 cup peanut butter
• 1 egg
• 1 t vanilla
• 1 t baking soda
• 1/2 t salt
• 1 cup plus 1 T AP flour

Preparation

Step 1

1. Heat oven 350 degrees. In a bowl, mix margarine and peanut butter until light.

2. Add sugars and mix well. Add egg and vanilla.

3. Mix AP flour, soda, and salt together. Fold into butter mixture until just mixed.

4. Spoon small balls (about 1/2" in diameter) onto ungreased baking sheet. Roll each ball in hand to make a smoother ball. Press top of cookie with floured fork.

5. Bake 350 degrees x 8-10 minutes. Don't bake too much or they are dry. Bake JUST until the sheen on the top is gone.
