Ingredients
- 3 cups reduced sodium vegetable or chicken broth
- 1 (28 ounce) can crushed tomatoes
- 1 small zucchini, diced
- 1 small Japanese eggplant, diced
- 1/4 cup chopped fresh basil

Step 1
Combine the broth, tomatoes, zucchini, and eggplant in a large saucepan over high heat. Bring to a boil, increase the heat to medium and simmer for 20 min. Remove from the heat and stir in the basil. Season to taste with salt and freshly ground pepper before serving.
