Whole Wheat Applesauce Pancakes

- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tbsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. apple pie spice
- 1 large egg, lightly beaten
- 3/4 cup milk
- 1/3 cup applesauce
- 2 tbsp. butter, melted
- 4 tsp. vegetable oil

Kids can help combine the flours, sugar, baking powder, salt, and apple pie spice together in a bowl. Whisk until well blended.
Combine the egg, milk, applesauce, and butter in a 2-cup measuring cup. Slowly pour the wet ingredients into the flour mixture. Whisk until just smooth.
Pour about a teaspoon of the vegetable oil in a large skillet. With a paper towel, spread the oil all over the bottom of the skillet. Heat skillet over medium-high heat.
Spoon about 1 tbsp. of the batter into the hot pan, about 2 inches apart. Cook until pancakes bubble on the top and are golden brown on the bottom, about 1 to 2 minutes. Turn pancakes over and continue cooking until golden, about 1 minute longer. Add another teaspoon of oil and continue cooking pancake batter and adding oil to pan as necessary.
Serve pancakes with sliced fruit, applesauce, and maple syrup.
