Potato Puffs

These are very tasty with a 3/4-inch piece of cooked bacon (from about 5 slices total) on top of the cheese.
You could also add a little dehydrated green onion, and garlic powder
Ingredients
- 1 pint sour cream
- 4 eggs, beaten
- 1 cup shredded sharp cheddar cheese
- 1 cup crumbled bacon
- 2 cups potato flakes (instant mashed potatoes)
- heavy cream as needed for moisture

Preparation
Step 1
Add sour cream to beaten eggs, blend until smooth, and add cheese and bacon. Slowly add potato flakes until a dough-like ball is created. If dry, add heavy cream by the tablespoon until dough ball is soft.
Pinch off small balls and heat in a cake pop maker until brown. (You may instead place in the oven at 350 degrees until brown, but you will need to spray the balls with a butter-flavored cooking spray first.)
When the cake pop maker is hot, spray with sunflower or vegetable oil. Place 1 dough ball in each well,and cook for 3 minutes, until medium golden brown. Let cool 5 minutes before serving.
