Honey Mustard Sauce
- 1 teaspoon chopped garlic
- 1 teaspoon chopped shallots
- 2 ounces white wine
- 1 teaspoon whole mustard seed
- 2 ounces fish stock
- 8 ounces heavy cream
- 1 tablespoon honey
- 2 tablespoons whole grain mustard
Sweat garlic and shallots. Deglaze with the white wine and add whole mustard seed. Add fish stock and reduce by half; add heavy cream and reduce by one fourth. Season with honey and mustard to taste.
