Scalloped Potatoes

Ingredients

  • 1/2 chopped onion, optional
  • 4 c. thinly sliced potatoes
  • 3 tbs butter
  • 3 tbs flour
  • 1 1/2 c. milk
  • 1 tsp salt
  • 1 dash pepper
  • 1 c. grated sharp cheddar cheese
  • 1/2 c. grated cheese, to sprinkle on top
  • paprika

Preparation

Step 1

In a small sauce pan, melt butter and blend in flour. Let sit for a minute.
Add all of cold milk, stirring with a whisk. Season with salt and pepper.
Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat and stir in cheese.
Make 3 layers of the sliced potatoes and onions and cheese sauce in a lightly greased one quart casserole dish. Sprinkle the remaining cheese on top. Top with some paprika for color.
Bake uncovered for about 1 hour at 350. Makes 4 to 6 servings.
