Chicken Rice Soup

Ingredients

  • 2 tbs melted butter
  • 1/2 c. chopped carrot
  • 1/2 c. chopped onion
  • 4 c. chicken broth
  • 1 1/2 c. cooked brown rice
  • Leftover chicken pieces
  • 1 tbs Spike Seasoning
  • 1 c. frozen gr. peas
  • 2 tbs finely chopped parsley
  • Salt to taste

Preparation

Step 1

Sauté the onions and carrots in butter. Combine broth, rice, chicken, onion, carrots and spike seasoning in soup pot, bring almost to a boil, reduce heat, and simmer until vegetables are tender. About 5 to 7 minutes before serving add peas, parsley and salt.
