Roasted Artichoke Gratin

Ingredients
- 2 (9 oz) boxes frozen artichoke hearts, thawed
- 9 garlic cloves, minced (1 1/2 Tbsp)
- 2 Tbsp chopped fresh basil
- 2 Tbsp chopped fresh parsley
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1/3 cup shredded fontina cheese (1 1/2 oz)
- 1/4 cup shredded taleggio cheese (1 oz)
- 1/4 cup grated Parmesan, preferably Parmigiano Reggiano

Preparation
Step 1
1. Heat oven to 400 degrees. Lightly oil a 6 cup oval gratin dish.
2. Combine artichokes, garlic, basil, parsley, oil and lemon juice in a bowl; toss well. Pour into the prepared gratin dish. Roast 20 min, stirring occasionally.
3. Remove from oven. Sprinkle fontina, taleggio and parmesan cheeses evenly over the top. Return to oven. Roast until cheeses melt and begin to brown, about 20 min longer.
