Black Bean Tostadas

Ingredients

  • Sauce:
  • 1/4 cup sour cream
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 2 tsp water
  • 1/4-1/2 tsp Tabasco sauce
  • Salt and pepper, to taste
  • Tostadas:
  • 4 low fat tortillas, any flavor
  • 1 Tbsp olive oil
  • 1 tsp chili powder or ground cumin
  • 2 cups finely shredded Romaine lettuce
  • 3/4 cup canned black beans, rinsed and drained
  • 4 oz Pepper Jack cheese, diced
  • 1 small tomato, diced
  • 1/2 avocado, peeled and diced
  • 2 green onions, sliced

Preparation

Step 1

1. For sauce, in a bowl combine ingredients and set aside.

2. For tostadas, heat oven to 400 degrees. Brush tortillas on both sides with olive oil and place on a cookie sheet. Sprinkle with chili powder. Bake 10 min or until browned in spots. Set aside.

3. In a bowl, toss lettuce, beans, cheese, tomato, avocado and green onions. Place tortillas on plates, top with salad and drizzle with sauce.
