Ingredients
- Bread:
- 1 Pkg Dry Yeast
- 2 Cups Luke Warm Water
- 1/2 # Melted Butter
- 3 Eggs
- 2 T Salt
- 2 T Sugar
- 7 Cups Flour
- Filling:
- 2 lbs Italian Sausage, cut in small pieces and browned
- 2 T Melted Butter
- 3 # Ricotta Cheese
- 2 tsp Salt
- 2 1/2 Cups Grated Parmesan Cheese
- 6-8 Eggs, well beaten

Step 1
Bread:
Mix yeast and water and let stand. Mix all other ingredients then add yeast water. Mix until sticky, then put on board and knead until smooth. Put dough in a greased bowl (large enough to allow for rising), cover with saran and let rise.
Filling:
Mix all ingredients together.
When the dough has doubled in size, punch down and transfer to the board. Roll into a rope and cut into 8 pieces. Roll each piece into a circle and add filling to half of the circle. Fold over the unfilled half and pinch the edged. Piece the top with a fork and cover with egg wash. Bake in the oven at 350 degrees for 30 minutes.
