Ingredients
- 1 1 1 lb. dried pinto beans, rinsed and picked over
- 8-10 8-10 8-10 cups water
- 1 1 1 lb. peppered bacon, cubed
- 1/2 1/2 1/2 onion, diced
- 3 3 cloves 3 large cloves garlic, minced
- 2 2 2 cups picante sauce (mild, medium or hot - your choice)
- 1 1 1 bunch cilantro, chopped
- 1 1 1 jalapeno, chopped
- to and pepper to taste
Preparation
Step 1
Place beans in a pot and add enough cold water to cover by 2". Let them soak overnight. Drain the beans well.
In stock pot, par cook the bacon over medium heat until lightly browned and some of the fast has rendered, about 4-6 minutes. Add the onions and cook for about 8 minutes, or until the onions are tender. Add the garlic, and cook for 1 minute.
Add the beans and water to the pot and bring to a boil. Once boiling, reduce the heat to medium, cover sand cook for 1 hour.
Add the picante sauce, cilantro, jalapeno and salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and continue cooking for 2 more hours.
