One Pot Ragu with Italian Sausage

Ingredients

  • 1/2 cup chopped carrot, celery and onion
  • 2 tbs olive oil
  • 1 lb Italian sausage
  • 1 28 oz petite diced tomatoes
  • 3 cups chicken broth
  • 1 tbs Italian seasoning
  • 8 oz spaghetti
  • 1/2 cup chopped fresh basil

Preparation

Step 1

Mince carrot, celery and onion in food processor. Heat oil in a pot. Add sausage and minced vegetables; cook until sausage browns, about 5 minutes. Stir in diced tomatoes, chicken broth, Italian seasoning and spaghetti, broken in half; bring to a boil. Cover pot, reduce heat to medium low and cook rags until pasta is al dente and sauce thickens 8-10 minutes. Season rags with salt and pepper; stir in 1/2 cup chopped fresh basil.
