Ingredients
- 1 cup buttermilk
- 1 Tbs. hot sauce
- 4 skinless, boneless chicken breasts
- 1 1/2 cup panko
- 3 Tbs. Parmesan cheese
- 1 1/2 tsp. onion powder
- 1 1/2 tsp. garlic powder
- 2 tsp. black pepper
- 1 tsp. cayenne pepper
- 1 tsp. paprika
- olive oil spray

Preheat oven to 400°
In a bowl combine buttermilk and hot sauce. Add chicken and marinate in the refrigerator at least one hour.
Combine dry ingredients in a gallon size plastic bag.
Remove chicken from the marinade, and place it in the bag. Shake well to coat. Lay chicken on lightly oiled baking sheet and chill uncovered in the refrigerator for 30 minutes. Remove, lightly spray with oil and bake 15 to 20 minutes, turn over and bake 15 to 20 minutes more.
Very good, but spicy. Can be made with talapia, I cut the recipe in half for two.
