Ingredients
- 2 TBS Olive Oil
- 16 Shrimp, peeled and deveined
- 3 Chicken Breast Halves, cut into chunks
- 1/2 of a Red Bell Pepper, cut in thin strips
- 1/2 of an Onion, cut into thin strips
- 1 Garlic Cloves, minced
- 1 can Diced Tomatoes
- 1 tsp Salt
- 1 tsp Black Pepper
- 2 tsp Red Pepper Flakes
- Cooked Quinoa
Preparation
Step 1
1. Cut chicken breast into cubes and set aside. Peel and devein shrimp and set aside. Click here for deveining instructions.
2. Add olive oil to a hot pan and add the chicken. Season with salt and pepper and cook at least 6 minutes, until chicken is cooked all the way through. Remove the chicken from the pan and add the shrimp and cook until finished, only 3 - 4 minutes, then remove from the pan.
3. While the pan is still out add the onions and red bell pepper strips. Let vegetables cook for at least 5 minutes, until softened and aromatic. Add the garlic and cook an addition 2 minutes, before adding the can of tomatoes.
4. Cook the onion, pepper, garlic and tomatoes until the liquid has been reduced and you have a thick sauce. Season with the salt, pepper, and red pepper flakes.
5. Add the chicken and shrimp to the sauce and toss. Serve with quinoa, rice or pasta.
