Basic Beef Stew

Ingredients

  • Foundation
  • 3 lbs beef stew meat
  • 1/2 C flour
  • s/p to taste
  • 2-3 T veg oil
  • 2 C chopped onion
  • 1 t minced garlic
  • Build up
  • 1 C red wine
  • 3 C beef broth
  • 2 T worchestershire sauce
  • 1 C crushed tomatoes
  • Finish
  • 3 lg red or white potatoes, peeled and cut in chunks
  • 4 carrots, peeled and cut into 2 " lengths
  • 3 ribs of cut celery
  • 2 T parsley (chopped)

Preparation

Step 1

Foundation:
Season flour w/ salt and pepper. Completely coat pieces of meat w/ flour; pat of excess. Heat 2 T oil in large Dutch Oven over med heat. Add meat in 2-3 batches, being careful not to crowd pan. Add each batch browns, remove from pan. Place in bowl and set aside. If there is less than a thin film of oil left in pan, ad remaining oil and heat thoroughly. Add onion, cook til lghtly browned, stirring often; about 4mins. As soon as onion is brown, add garlic, 2 T of remaining seasoned flour; stir a few seconds Do not overcook.
Build Up:
Add red wine, bring to boil. Boil til all alcohol in wine has dissipated (smell steam rising fro pot. If your nose smarts, there's still alcohol present) Return meat to pot alog w/ its liquid. Add beef broth, worchestershire sauce, tomatoes. Bring to boil, reduce heat to simmer, cover, simmer 1 hour.
Finish:
Add potatoes, carrots, celery; simmer 1-1 1/2 more hours, til meat and veggies are tender and broth is fully flavored. Add parsley; adjust seasoning w/ salt and pepper.
