Baked Broccoli-Cheddar Rollups
- 4 ounce(s) sharp Cheddar, grated
- 1/4 cup(s) low-fat sour cream
- 2 scallions, chopped
- Kosher salt
- 1 package(s) (10-ounce) broccoli florets, thawed and squeezed of excess moisture, then cut into 1-inch pieces
- 1 pound(s) pizza dough, thawed, if frozen
- Olive oil, for brushing
Heat oven to 400 degrees F. Line a baking sheet with parchment paper.
In a large bowl, combine Cheddar, sour cream, scallions, and 1/4 teaspoon each salt and pepper. Fold in broccoli.
Shape pizza dough into a 14-inch circle, then cut into 8 triangles.
Divide broccoli mixture among triangles. Starting at wide end, roll dough around filling (some of filling will stick out).
Transfer rolls to prepared baking sheet, brush dough with oil and bake until golden brown, 20 to 25 minutes.
