Ham with Parsley

Ingredients
- 2 kg salted ham or pork shoulder
- 1 veal trotter (calf's foot)
- 500 g shank of veal
- 3 carrots
- 1 onion
- 1 clove
- 1 bouquet garni
- bottle of white wine
- whole pepper
- 2 garlic cloves
- 3 shallots
- 1 big branch of Italian parsley
Preparation
Step 1
1. Put the ham in cold water for 12 hours. Drain the ham and put the ham in a large pot. Cover with cold water and bring to a boil very slowly. Reduce the heat to a low simmer slowly, add the veal trotter and simmer slowly for 30 minutes.
2. Pick out the veal trotter and the ham, take off the skin of the ham and also the bone - reserve. Empty the water from the pan. Peel the carrots in round slices. Peel the onion and put the clove in the onion.
3. Put back in the pan the ham, the skin of the ham, the bone and the veal trotter, and the shank of veal. Add the carrots, the onion with the clove, bouquet gami and 12 whole peppercorns. Add the wine, and cook everything very slowly until the meats are very tender.
4. Peel and mince very finely the garlic and the shallots. Cut the parsley leaves with scissors. Drain all the meat and remove the bone of veal trotter and the shank of veal. Cut all the meat in same size pieces. Drain the cooking liquid but keep warm. Remove the grease.
5. Put a few tablespoons of the cooking liquid into a terrine and cool until it is firm. Then add to the terrine layers of meat, parsley, and the shallots and garlic.
6. Slowly add all of the cooking liquid. Put terrine in the refrigerator and let it set until it is firm.
