Ingredients
- 4 boneless skinless chicken breast
- 2 teaspoon dijon mustard
- 4 very thin slices of cooked ham
- 4 very thin slices low fat swiss cheese
- 1 egg white
- 1 tablespoon water
- 1/3 cup corn flaks
- 1/4 teaspoon paprika
Preparation
Step 1
heat oven to 375*
spray baking dish with no stick
place chicken breast between wax paper
gently pound chicken with meat mallet until about 1/4 inch thick
spread each cutlet with 1/2 teaspoon mustard
cut ham and cheese to fit cutlet
roll up tucking ends inside
in a shallow bowl combine egg white with water beat slightly
place corn flake crumbs in shallow bowl
coat chicken with egg white and then rol in corn flakes
place in baking dish
sprinkle with paprika
bake 375* for 25-30 minutes or until chicken is tender and juices are clear
