Black Beans

Ingredients

  • 4 cloves garlic, cut in half
  • 1 sm onion, quartered
  • 1 sm green pepper, quartered
  • 6 cups water
  • 2 cups dried black beans (1#)
  • 1 T cumin
  • 2 bay leaves
  • 1 1/2 t salt
  • 1/4 t pepper

Preparation

Step 1

Place garlic, onion, and green pepper into blender with ½ cup water. Blend until finely chopped and pour into saucepan. Add remaining water, washed beans, cumin, and bay leaves. Bring to a boil; lower heat, cover, and simmer gently until almost done, 1 hour. Add salt and pepper, Cook 30 minutes more or until tender. Remove bay leaves and serve.
