Ingredients

  • 1/2 cup mango chutney
  • 1/4 cup chili sauce
  • 2 tablespoons quick-cooking tapioca
  • 1 1/2 teaspoons grated fresh gingerroot
  • 4 pounds skinless chicken thighs

Preparation

Step 1

Cut up any large pieces of fruit in the chutney. In a slow cooker, combine chutney, chili sauce, tapioca and gingerroot. Add chicken, turning to coat. Cover and cook on LOW for 5 to 6 hours or on HIGH for 2 1/2 to 3 hours.

SERVING SUGGESTION: Whole wheat couscous and steamed broccoli.
VEGETARIAN: Use non-breaded faux chicken patties.
KOSHER: No changes necessary.
