Savory Oven Pork Roast

Ingredients

  • 1 1/2 pounds pork tenderloin, trimmed
  • 2 red apples, peeled, cored and chopped
  • 1 cup cranberries (fresh or frozen)
  • 1/4 cup barbecue sauce
  • 2 tablespoons firmly packed brown sugar
  • 1/4 cup water

Preparation

Step 1

Preheat oven to 325 degrees. Place tenderloin on a rack in a shallow roasting pan; bake until browned and cooked through, about 1 hour and 20 minutes. Meanwhile, in a medium saucepan, combine apples, cranberries, barbecue sauce, brown sugar and water; bring to a boil then reduce heat and simmer, uncovered, stirring as needed, until cranberries pop and sauce has slightly thickened, about 15 minutes. Serve pork with sauce spooned over the top.

SERVING SUGGESTION: Steamed red skinned potatoes and steamed asparagus.
VEGETARIAN: Use a faux roast such as Quorn’s Turk’y Roast.
KOSHER: Use boneless skinless chicken breast halves instead of pork. Bake chicken for 25 to 30 minutes at 350 degrees then proceed with recipe as directed.
