Ingredients

  • 1 uncooked 9 inch pie crust
  • 3 tomatoes, thinly sliced - flour for dredging
  • 2 tsp. salt
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 3/4 cup shredded Cheddar cheese
  • 3/4 cup shredded mozzarella cheese
  • 2/3 cup mayonnaise
  • 2 T Parmesan cheese

Step 1

1 Heat oven to 450 degrees. Press pie crust into a 9 inch pie pan; prick bottom and sides with fork. Bake crust until lightly browned, 10 to 12 min. Cool completely

2. Place tomatoes in a single layer of a colander; sprinkle with salt. Let sit for about 10 min. to release moisture. Blot excess moisture with a paper towel. Dredge blotted tomatoes in flour. Arrange the slices in a layer around the bottom of the cooled pie crust, overlapping slices.

3. Sprinkle half the garlic, half the basil and half both cheeses . Repeat layering with remaining tomatoes, garlic, basil and cheeses.

4. In a small bowl mix together the mayonnaise and the Parmesan cheese, and spread the mixture over the pie.

5. Bake in the preheated 350 degree oven until cheese is melted and bubbling, about 30 min. Serve immediately
