Ingredients
- 2 cups Baby Spinach
- Optional red onion slices
- 2 Hard boiled eggs sliced
- 2 slices BD approved bacon, cooked and crumbled
- 1/4 cup + 2 Tablespoons Lakanto sweetner
- 2 teaspoons Dijon mustard
- 1/4 cup red wine vinegar
- This makes enough dressing for several salads.

Preparation
Step 1
-Wash spinach, place in salad bowl.
-Top spinach with crumbled bacon.
-Prepare salad dressing, microwave to heat up and combine flavors.
-Pour about 1T dressing on spinach, gently toss.
-Top with egg slices.
