Have roast at room temperature (remove from refrigerator 1 hour before cooking). Preheat oven to 375F.
Using a sharp knife make 8 small incissions around the roast. Place a sliver of garlic into each incision. Take a tbsp or so of olive oil and spread all around the roast. Sprinkle around the roast with salt and pepper. Cook on a rack.
Brown roast at 375F for 30 minutes. Then lower heat to 225F for another 60-90 minutes, depending on size of roast. Internal temperature should be 135 to 140F. Rest for 15 minutes then carve
