Broccoli Noodle Parmesan from Lori

Ingredients

  • 1 bunch broccoli
  • 2 T. oil
  • 1/2 medium onion
  • 1/2 il. mushrooms
  • 1/2 t. salt
  • 1/2 t. rosemary
  • 1/4 t. thyme
  • 1/2 cup sunflower seeds
  • Pinch of pepper
  • Parmesan to taste

Preparation

Step 1

Break broccoli into florets and chop up as much of the stems as you wish to use.
Heat oil in a large frying pan on medium. Saute onion for a few minutes then add broccoli stems and stir and minute more. Add mushrooms, salt, herbs and seeds and stir another minute. Then add 1/4 cup water and place broccoli florets on top. Reduce heat and steam covered for 15 minutes until florets are crunchy and tender. Remove from heat and sprinkle with parmesan. Serve over noodles.
