Marinated Pork Roast

Ingredients

  • Marnade:
  • 2 1 oound pork loin roasts
  • 1/2 cup soy sauce
  • 1/2 cup sherry
  • 2 cloves garlic, minced
  • 1 T. dry mustard
  • 1 t. ginger
  • 1 t. thyme
  • Sauce:
  • 1 10 oz. jar currant jelly
  • 2 T. sherry
  • 2 T. soy sauce

Preparation

Step 1

Blend ingredients for marinade and place in a 1 gallon plastic bag. Add meat and seal. Marinate for 2-3 hours or overnight, turning occassionally.
Place roast on shallow rack in roasting pan. Bake at 325 for 45 minutes to 1 hour or until meat thermometer register 165' to 170'. Base with marinade throught cooking cycle.

Combine ingredients for currant sauce and simmer two minutes.

Serve meat with warm currant sauce.
