Black Magic Cake

Ingredients

  • 2 cups Sugar
  • 2 eggs
  • 1 3/4 cup flour
  • 2 tsp powdered instant coffee
  • 3/4 cup cocoa
  • 1 cup boiling water
  • 2 tsp baking soda
  • 1 cup buttermilk
  • 1 tsp baking powder
  • 1/2 cup oil
  • 1 tsp salt
  • 1 tsp vanilla

Preparation

Step 1

Heat oven to 350F. Grease and flour two 9 inch round baking pans, or one 13X9. In a large mixing bowl, blend sugar , flour, cocoa, baking soda, powder and salt. Add eggs, coffee, buttermilk, oil and vanilla. Beat on medium for 2 minutes batter will be thin. Pour batter into prepared pan. Bake 30 to 35 for round pans or 35 to 45 minutes for 13X9 or until toothpick comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.

One Bowl Buttercream Frosting

6 tablespoons butter, softened
2 2/3 cups powdered sugar
½ cup cocoa
1/3 milk
1 tsp vanilla

In a small mixer beat butter. Add sugar and cocoa alternately w milk. Beat to spreading consistency may need additional milk. Blend in vanilla. Makes about 2 cups of frosting.
