Pork and Green Chili Casserole

Ingredients

  • 1.5 lbs pork, cubed
  • 1 T oil
  • 1 can (15 oz) black beans, rinsed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 8 oz chopped green chilies
  • 1 c quick-cooking brown rice
  • 1/4 c water
  • 2-3 T salsa
  • 1 t cumin
  • 1/2 c shredded cheddar cheese

Preparation

Step 1

In lg skillet, brown pork in oil, drain. Add beans, soup, tomatoes, chilies, rice, water, salsa and cumin; cook and stir til bubbly. Pour into greased 2 qt baking dish. Bake, uncovered, at 350 for 30 min or til bubbly. Sprinkle with cheese, let stand 5 min before serving.
