Ingredients
- 4 Medium Tomatoes
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped green bell pepper
- 1/4 cup olive oil
- 2-3 Tablespoons finely chopped canned green chili peppers
- 2 Tablespoons red wine vinegar
- 1 teaspoon mustard seed
- 1 teaspoon coriander seed, crushed
- 1 teaspoon sea salt
- Dash of pepper
Preparation
Step 1
To peel tomatoes, dip them in boiling water for 30 seconds then plunge into cold water. Slip skins off and chop tomatoes. Combine chopped tomatoes with onion, celery, green peppers, olive oil, green chili peppers, vinegar mustard seed, coriander seed, salt and pepper.
Cover; refrigerate several hours or overnight, stirring occasionally.
Makes about 3 cups.
