Sausage Fettuccine Bake

  • 3/4 lb uncooked fettucine
  • 1 lb sausage
  • 1 lg onion
  • 1/2 pepper
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 jar (4.5 oz) sliced mushrooms
  • 2 t Italian seasoning
  • 2 c shredded mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/4 c beef broth
  • 1/2 c grated parmesan cheese



Step 1

Cook fettuccine according to package. Meanwhile; cook sausage and onions in saute pan, drain. Add tomatoes, mushrooms and seasonings; bring to boil. Reduce heat, simmer, uncovered for 5 min. Drain pasta, stir in meat mix, transfer 1/2 to greased 13x9 in dish. Sprinkle with 1 c mozzarella, top with other 1/2 of mix. In small bowl mix soup and broth, spread over casserole. Sprinkle with mozzarella and parmesan. Cover and bake at 350 for 20 min, uncover and bake 5-10 more minutes. Let stand 5 min before serving.
