Carrot Cake

  • 4 eggs
  • 1 1/2 c. vegetable oil
  • 2 c. sugar
  • 2 c. flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 c. grated carrot
  • 1 1/2 c. coarsely chopped pecans
  • 2 tsp. vanilla
  • 1 small crushed pineapple, drained
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. butter
  • 3/4 box (16 oz.) powdered sugar
  • pinch salt
  • 1 1/4 tsp. vanilla
  • 1 c. chopped pecans

Preparation

Step 1

Preheat oven to 350 degrees. Beat eggs and oil. Gradually add sugar. In separate bowl, mix flour, salt, soda and cinnamon. Combine the egg mixture with the dry ingredients. Mix 2 minutes. Stir in carrots, pecans, vanilla and pineapple. Mix until blended. Bake in greased 13" pan for 50-55 minutes or in 2 (9") pans 40 minutes. Beat cream cheese and butter. Add sugar, salt, and vanilla. Add pecans. Frost cake. Refrigerate after 1st day.
