Ingredients
- 2 lbs. round steak
- 1 large onion, sliced
- 2 garlic cloves, chopped
- 1 jalapeno, sliced
- 1 tomato, sliced
- 1 tsp. ground cumin
- 1/2 tsp. black pepper
- 1 tsp. chili powder, red pepper flakes, or cayenne
- 1 tsp. olive oil or vegetable oil
- 1 tsp. crushed oregano
- 2 c. water
- 1 Tb. flour
- 1 Tb. Worcestershire
- flour tortillas
Preparation
Step 1
Cut the steak into cubes. Heat one tsp. of oil and place half of the onion and garlic into the hot oil. Stir until the garlic and onion begin to brown. Turn the heat to medium-low and place the meat in the skillet with the onion and garlic. Cook for 15 minutes, stirring occasionally, and watching for the accumulations of oil. Spoon out accumulations as you cook. After 20 minutes of cooking, drain skillet of all liquids. Add remaining ingredients to meat (except for flour, water and Worcestershire). Mix flour, water, and Worcestershire in separate container. Add to meat. Cook on medium heat, covered, for about 1 hour or until meat crumbles easily and the water is gravy-like. Serve on flour tortillas.
