Whipped Icing For Cakes

Ingredients

  • 1 pound granulated sugar
  • 8 ounces egg whites
  • 2 pounds 2 ounces butter (or sub 1 pound shortening for 1 pound butter if it is hot in your region)
  • 8 ounces powdered sugar
  • 2 tablespoons vanilla

Preparation

Step 1

To dissolve sugar in egg whites, place over double boiler over medium heat and stir until sugar is dissolved and egg whites are warm. Place in mixer bowl and whip until medium-stiff peaks form. Let cool.

In mixer bowl cream butter with powdered sugar until smooth. Slowly add in shortening until smooth. Slowly add in butter/sugar mixer to egg whites. Add vanilla and mix until smooth.
