Ingredients

  • 1 lb. ground beef
  • 1 onion chopped
  • 1 24 oz. jar corn & black bean salsa
  • 1 small can chopped green chilies
  • 3/4 cup minute rice
  • 1 cup water
  • 1 cup shredded cheddar cheese

Preparation

Step 1

Heat a large skillet over medium hat. Add beef & onion & cook until no longer pink, drain. Add salsa, chilies, rice & the water, mix well. Cover & allow to
stand for 10 minutes. Turn off heat & add the cheese; serve when cheese is melted.

Serves about 8
