Ingredients
- 2 tbsp olive oil
- 3 cups mushrooms
- 1 onion chopped
- 2 slices of bacon cut up
- 1 cup uncooked regular long grain rice
- 2 1/3 cups water
- 1 tbsp soy sauce
- 2 chicken bouillon cubes
- 2 cups cut up chicken
- 1/2 cup dried apricots
- 1/2 cup chopped dates
- 1/4 cup unsalted roasted cashews
- green onion sprinkled over top (optional)

Preparation
Step 1
Heat oil. Cook mushrooms, onion and bacon 10 minutes. Stir in rice and cook 5 minutes. Stir in water, soy and bouillon. Heat to boiling, reduce heat. Cover and simmer about 20 minutes until liquid is absorbed. Stir in remaining ingredients. Cover and let stand 5 minutes before serving.
