  • 1 lb. Extra Large Dry Lima Beans
  • 1 lb. Bulk Sausage
  • 1 c. Chopped Onion
  • 1 c. Chopped Green Pepper
  • 1 c. Chopped Celery
  • 1 c. Brown Sugar
  • 1 c. Ketchup



Step 1

Soak beans overnight in water, drain. Cover with water and simmer until tender (2 1/2 - 3 hours), you should add some salt. Cook sausage, but do not brown. Remove sausage, cook vegetables in sausage fat - you may add oil if necessary. Add sugar and ketchup - stir until sugar is dissolved. Add beans. Cover and bake at 225' for 2 - 3 hours, uncover last 1/2 hour. You may also put them in the crock pot for 4 hours.
