Turkey Dressing from Grandma

This is the recipe Grandma gave me when I baked my first turkey dinner in 1966. She just added things without measuring, as I do now, but it is pretty authentic.

Ingredients

  • 6 cups cubed bread (a firm bread like Pepperidge Farm is best)
  • 1/2 cup. finely chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup butter, melted
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • sage to taste
  • 2 t. poultry seasoning
  • Hot water to moisten

Step 1

Cook the onion and the celery in the butter over a low heat until tender. Pour this mixture over the bread cubes and mix well. Add the salt and pepper and then add the sage and poultry seasoning to taste( this is the tricky part- Grandma used mostly sage with a little bit of poultry seasoning to make it spicy - I use about half and half - just remember, the poultry seasoning will make it have a little more "zing" than the sage).
Let this mixture set until the next day. Moisten with water. (Not too much, just until feels like it will almost stick in a ball.)

Spray a casserole dish lightly with PAM and press the stuffing gently into it. Bake until it is heated through and a little crispy on the top. It takes about an hour or so in a 325' oven.
