Chicken a la King

A great way to use up leftover chicken or even turkey. Chicken a la King features shredded or diced chicken in a creamy sauce with mushrooms, red and green peppers served over biscuits. I sometimes serve with rice. Either way it's delicious!

Ingredients

  • 1

    fresh mushrooms, sliced

  • 1

    cup red or green pepper, chopped

  • ¼

    cup butter

  • 2

    cups milk

  • Salt & pepper to taste

  • 1

    egg yolk, beaten

  • cups chicken, cooked, diced

  • 2

    tablespoons flour

Directions

Saute the mushrooms and green pepper in butter. Add the flour and blend. Add the milk and seasonings and cook until thickened, stir constantly. Remove some of the mixture and mix well with the beaten egg yolk. Add back to the remaining hot mixture, cook an additional minute or two stirring constantly. Add the chicken. Serve over hot biscuits or baked puff pastry.
