Salad, Kirk's Crab Salad Christmas"2003"

Very colorful, festive, delicious salad!

Ingredients

  • 1 lb. can cooked crab meat
  • 1 1/2 -2 lbs. cooked (boiled with crab boil) shrimp
  • 3-4 Tablespoons finely chopped fresh parsley
  • 1 tablespoon freshly chopped cilantro
  • 2 tablespoons finely chopped red bell pepper
  • 2 tablespoons yellow bell pepper
  • 1 cucumber, seeded, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 teaspoon McGuffee's Spice
  • 1/8 teaspoon ground fennel
  • 1/8 teaspoon ground rosemary
  • 1/8 teaspoon ground tarragon
  • Juice of 1/2 lemon or to taste

Preparation

Step 1


Peel and devein shrimp.

Cut shrimp into 1/2 piece; place in bowl with crab meat, parsley, cilantro, cucumber and bell peppers. Mix lightly.

Mix all spices well with mayonnaise; add lemon juice to mayonnaise and mix well.

Fold dressing into salad

I used a spatula. Don't mix too vigorously or you will turn crab into pulp. Chill till flavors blend (6 hours or overnight)
