Ingredients
- Ingredients (14 cookies)
- ■2 ripe bananas
- ■1/4-1/3 c. coconut oil
- ■2 Tbsp brown sugar
- ■1 tsp lemon extract, substitute vanilla extract
- ■1 + 1/3 c. rolled oats
- ■1/3 c. chopped nuts (I used pecans and almonds)
- ■2-3 dates, rough chopped

Preheat oven to 350 degrees
To vitamix or blender add the banana, oil, sugar, extract, and 1 c. oats. Blend on high until smoothish. About 30 sec on high on the vitamix. You may have to scrap down the sides.
Add the nuts, dates and oats and incorporate with a spatula, you may find it easier to transfer this mix to a bowl and then add in the nuts/dates/oats, your choice.
Make 14 balls and transfer them to a parchment paper lined baking sheet, flatten them a little once on the baking sheet.
Bake for 18-20 minutes. Remove from oven, let cool for 1 minute then transfer to a cooling rack to finish cooling.
