Tortilla Flats

Ingredients

  • 1 (16 oz) can black beans, drained and rinsed
  • 1/2 tsp chili powder
  • 6 (6 inch) corn tortillas
  • 1/4 c chopped cilantro
  • 1 lime, cut into 6 wedges
  • 6 T chopped green chilies, undrained
  • 6 T shredded cheddar cheese
  • salsa

Preparation

Step 1

Preheat oven to 450F. Mash beans, and chili powder in bowl to combine. Arrange tortillas in single layer on cookie sheet. Spread each with 2 generous tablespoons bean mixture. Sprinkle cilantro over tortillas. Squeeze 1 lime wedge over each tortilla. Top with 1 generous tablespoon green chilies and liquid, then 1 tablespoon cheese. Bake 5 minutes or until cheese is melted. Serve with salsa.
