Ingredients
- 1 pound peeled crawfish
- 1 cup chopped green onions
- 1 cup chopped parsley or watercress
- 3/4 cup heavy cream
- 1 teaspoon salt
- 1/8 teaspoon red pepper
- 1/2 cup bread crumbs buttered
- 3 cups chopped spinach
- 3/4 cup chopped celery
- 1 stick butter (or margarine)
- 1/8 cup Anisette liquer
- 1/2 teaspoon freshly-ground black pepper
- 1/2 teaspoon oregano leaves
- Grated Parmesan cheese

Preparation
Step 1
Sauté crawfish and vegetables in butter 10 minutes. Add cream, herbs and Anisette. Put in shallow casserole and cover with crumbs. Top with cheese and bake at 350 degrees for 20 minutes.
