  • 1/2 pound bacon
  • 1 stalk leeks cleaned well
  • 1 chopped onion
  • 3 celery stalks chopped
  • 2 carrots chopped
  • 3 bay leaves
  • Chopped parsley
  • 1/2 cup flour
  • 1 pound white potatoes
  • 1 pint cream or milk
  • 2 pounds little neck clams
  • 4 cups clam juice



Step 1

chop bacon raw bacon is easier to chop when placed in the freezer for a bit

render bacon until crispy

stir in leeks, onion, celery and carrots

sauté until soft

stir in flour and make a blonde rue

add the potatoes

stir in the clam juice

simmer until potatoes are fork tender

slowly stir in milk or cream

season with salt and pepper

sprinkle parsley just before serving
