Ingredients
- 1 pkg (5 oz) baby spinach
- 6 eggs
- 2 sliced scallions
- 1/3 cup chopped cilantro
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 can (15 oz) black beans
- 1 cup shredded Monterey Jack
- 1/4 cup salsa
- 4 large whole wheat tortillas
Preparation
Step 1
In a large nonstick skillet, heat 1 tbsp olive oil over medium heat. Stir in baby spinach and cook 2 minutes, until wilted.
Whisk eggs in a bowl with scallions, cilantro, chili powder, salt and pepper. Pour into skillet with spinach and stir 2 minutes, until cooked.
Distribute eggs, beans, Monterey Jack and salsa among warmed tortillas. Roll burrito-style and serve immediately.
