Watercress Soup

Ingredients

  • 2 chicken thighs
  • One bunch of watercress
  • 1 cup baby carrots, chopped
  • 1/2 cup red dates, pitted
  • 1 tbsp goji berries/wolfberries
  • 5 cups of water

Preparation

Step 1

Blanch chicken in boiling water for 2 minutes. Set aside.
Place water in a pot and bring to boil.
Place chicken, carrots, and red dates in pot.
Bring to a boil and then reduce the heat to low. Let it simmer for about an hour.
Add watercress leaves and wolfberries.
Continue letting it simmer for 20 minutes.
